Ingredients:
- 2 small to medium tomatoes, chopped, about 1 1/4 to 1 1/2 cups diced tomatoes
- 1/4 cup chopped onion
- 1/4 cup chopped green bell pepper
- 1/3 cup tomato paste
- 1 teaspoon chicken bouillon granules or base
- 1 small clove garlic, minced
- 1/2 teaspoon sugar
- 1/2 teaspoon dried leaf basil, crumbled
- 1/8 teaspoon ground black pepper
- 4 chicken breast halves or other chicken pieces
Preparation:
Add tomato paste, chicken bouillon granules or base, garlic, sugar, and basil. Arrange chicken in the baking dish with meatiest parts around outer edge of dish. Spoon sauce over top of each piece. Cover and microwave on full power for 7 minutes, rotating dish a half turn halfway through cooking. Microwave at 70% (medium-high) for 11 minutes longer, rotating dish a half turn after 5 minutes, until meat is no longer pink near the bone and juices run clear. Serve with juices spooned over chicken, with rice or noodles and a green vegetable or salad.
