Ginger Cookies

Ginger cut-out cookies with molasses.

Cook Time: 10 minutes

Ingredients:

  • 1 cup molasses
  • 1 cup shortening
  • 3/4 cup sugar
  • 1 teaspoon baking soda
  • 2 eggs, beaten
  • 4 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1/2 teaspoon allspice
  • 1/4 teaspoon ground cloves
  • 1 teaspoon salt

Preparation:

Combine molasses, shortening and sugar in a medium saucepan. Bring to a boil; boil for 3 to 4 minutes. Remove from heat; add baking soda and let cool. Sift flour with spices and salt. Add the beaten eggs to the cooled molasses mixture; stir in sifted flour and spice mixture. Roll small amounts of ginger cookie dough out on a lightly floured surface. Roll as thin as possible; cut with 2-inch cookie cutters. Bake ginger cookies at 375° for 8 to 10 minutes. Makes 8 to 10 dozen ginger cookies.
