Oatmeal Molasses Cookies

Cook Time: 12 minutes

Ingredients:

  • 1 cup granulated sugar
  • 1/2 cup shortening
  • 1 egg
  • 1/2 cup molasses
  • 2 cups sifted flour
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon vanilla extract
  • 1 cup quick-cooking oats

Preparation:

Cream sugar and shortening together in a large mixing bowl. Add egg and molasses; beat well. Add sifted dry ingredients and mix well. Add vanilla then stir in oatmeal. Drop from teaspoon onto greased baking sheet. Bake at 375° for 10 to 12 minutes, until done.
Makes about 4 dozen oatmeal molasses cookies.

"I find this recipe calls for way too much salt. Next time I will cut the salt by at least half. I also think the baking soda could be reduced to 1 tsp. I added some cinnamon, cloves, and nutmeg to add a little more which made them very yummy. Overall, a good recipe :)"
