Citrus Fish

Use your favorite fillets in this fish recipe for the slow cooker.

Ingredients:

  • 1 1/2 pounds fish fillets
  • salt and pepper
  • 1 medium onion, chopped
  • 5 tablespoons chopped fresh parsley
  • 2 teaspoons oil
  • 2 teaspoons butter
  • 2 teaspoons grated lemon peel
  • 2 teaspoons grated orange peel
  • orange and lemon slices

Preparation:

Spray crockpot with butter flavored nonstick cooking spray and place the fish fillets in it. Season to taste with salt and pepper. In a skillet over medium-low heat, saute the onion and the chopped parsley in the butter and oil until the onion is transparent. Sprinkle over the fish with the grated citrus peel. Cover and cook on the LOW setting for 1 1/2 hours, until fish flakes easily with a fork. Serve garnished with orange and lemon slices.
Serves 4.
