Fish Fillets with Orange Sauce

Fish fillets are broiled with an orange and wine sauce.

Ingredients:

  • 1 1/2 pounds fish fillets
  • 2 tablespoons orange juice
  • 2 tablespoons dry white wine
  • 2 tablespoons melted butter
  • salt and pepper
  • 1/2 teaspoon grated orange zest

Preparation:

Spray rack of broiler pan with nonstick cooking spray. Place fish on rack in broiler pan. Blend orange juice and wine with melted butter; pour half over the fish fillets. Sprinkle with salt, pepper and orange zest. Broil 4 inches from heat for 2 minutes; pour remaining sauce over fish and continue broiling until fish is done. Fish should flake easily with a fork. Fish recipe serves 4.
