Vidalia Onion Muffins Recipe

Sweet onions, cheese, and chopped pecans give these savory muffins flavor and texture.

Ingredients:

  • 1 large egg, slightly beaten
  • 1/3 cup vegetable oil
  • 3/4 cup milk
  • 1 cup self-rising flour
  • 1 cup old-fashioned rolled oats
  • 1/4 cup sugar
  • 1/2 cup chopped Vidalia onion
  • 3/4 cup shredded sharp Cheddar cheese
  • 1/4 cup chopped pecans

Preparation:

In a large mixing bowl whisk together the egg, oil and milk; add self-rising flour, rolled oats, and the sugar. Stir batter just until mixture is blended. Gently old in the onion, shredded cheese, and pecans; spoon the mixture into 36 small buttered and floured 1/8-cup muffin cups (gem, or miniature muffin tins). Bake the muffins in the middle of a preheated 400° oven for 15 to 20 minutes, or until they are golden brown. Turn the muffins out onto racks and serve them warm or at room temperature.
Makes 36 miniature muffins.

If you are looking for something different in the way of muffins, try these. They are simply delicious, and even my family & friends who don't like onions have loved them! These have a very nice texture and bake up to a lovely golden brown color with a nice crown. They look fabulous arranged in a basket. If you are making a food gift basket, you might consider putting some of these muffins baked in either a mini-muffin or extra-large muffin pan. They are unusual enough to be a real treat for anyone. I made some for a baby shower where the mom-to-be had gestational diabetes. She was able to eat some of these instead of the chocolate-chip muffins, and later told me she liked them even better than the chocolate chip ones, which she had before she was pregnant. She raved about them so much that all of them were gone by the end of the shower even though there were chocolate chip ones left!
