Orange Pecan Muffins

Cream shortening and sugar; add egg and beat until light and creamy. Add cereal, orange peel, orange juice, and milk. Sift flour with baking powder, soda and salt. Add dry ingredients to first mixture, stirring just until all ingredients are moist. Fold in chopped pecans. Grease muffin cups and fill about 2/3 full with orange muffin batter. Bake at 400° for 25 to 30 minutes.

Makes 12 small muffins or 8 or 9 large orange muffins.
