This simple recipe takes the nutty crunch of Grape-Nuts cereal in a whole new direction: a highly portable, snackable form of a muffin.
Grape-Nuts muffins are the perfect afternoon treat or breakfast on the go. This six-step recipe prepares a dozen not-too-sweet muffins in about 30 minutes. The recipe can easily be altered to your liking. For example, it calls for a few tablespoons of sugar, but you can use maple syrup or honey instead.
Want to add a little fiber to your morning routine? Add some oat bran. Do you like your muffins to have a little more texture? Fold in some chopped pecans or walnuts (toast them first for extra nuttiness).

-
1 large egg, well beaten

1 cup milk
-
3 tablespoons melted shortening
Steps to Make It
-
Gather the ingredients.
-
Preheat oven to 425 F. Grease and flour muffin pans or line with paper liners.
-
In a bowl, combine flour, baking powder, salt, and sugar; whisk to blend thoroughly. Add cereal and mix.
-
Combine beaten egg, milk, and melted shortening; add to dry mixture and mix just until all ingredients are moistened.
-
Fill prepared muffin pans about 2/3 full.
-
Bake for 18 to 22 minutes, or until done.
Tip
These muffins are especially good the day after you make them, split in half and toasted in a toaster or right on a hot skillet. Add a bit of butter, or a drizzle of maple syrup or honey on them.
Variations
These muffins are endlessly adaptable. Try some of the following ways:
- Add a 1/4 cup of rolled oats to the dry ingredients.
- Boost up the nutty flavor and nutrition by adding a couple of tablespoons of either wheat germ, oat bran, or flaxseed meal.
- Add 1/2 cup of raisins or dried cranberries for some sweetness.
- Replace the melted shortening with melted butter, olive oil, or coconut oil.
How to Store and Freeze Grape-Nuts Muffins
- You can store these muffins in a covered airtight container at room temperature for up to 3 days.
- For longer storage (up to 6 months), wrap them individually in foil and freeze for up to 6 months. Reheat in the foil in a 350 F oven for 15 minutes or so until hot all the way through.
Why are they called Grape-Nuts?
Grape-Nuts contain neither grapes nor nuts, despite what the name suggests. The cereal is made from wheat and barley, but there are a couple of origin stories floating around. One suggests that the cereal looks a bit like grape seeds, and the taste is nutty, so the name Grape-Nuts was born; another suggests that cereal inventor C.W. Post believed that “grape sugar” (his name for glucose) formed during the baking process.
