Plain Muffins

Plain Muffins
Plain sweetened muffins made with shortening, milk, and eggs. Add some flavoring to the muffins, if you like.

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon + 1 teaspoon baking powder
  • 1 tablespoon sugar
  • 3/4 cup milk
  • 2 eggs, beaten
  • 1/4 cup melted shortening

Preparation:

Sift together the flour, salt, baking powder, and sugar. Combine remaining ingredients; add to dry ingredients all at once. Blend just until dry ingredients are moistened (batter will be lumpy). Fill greased muffin cups 2/3 full. Bake at 425° for 25 minutes.

Makes 12 muffins.

Cupcakes,not muffins, Member lamayoush

These are more like cupcakes than muffins. None the less,they are tasty. I added a dab of strawberry jam in them,and in a few,I put a piece of chocolate...DELICIOUS...
