Pecan Popovers

An easy pecan popover recipe.

Ingredients:

  • 1/4 cup pecans, chopped
  • 2 eggs
  • 1 cup milk
  • 1 cup sifted all-purpose flour
  • 1/4 teaspoon salt

Preparation:

Put eggs and milk in blender container; cover and blend for 3 seconds. Add flour and salt; cover and blend 10 seconds. Stir in pecans. Fill generously greased custard cups about 1/2 full. Bake popovers at 475° for 15 minutes. Reduce heat to 350°; bake 25 to 30 minutes longer, or until browned and firm. A minute or two before removing from oven, prick each popover with a fork to let steam escape. For crisper popovers, turn oven off and leaf popovers in oven for 15 to 20 minutes. Serve hot.
Makes 6 to 8 popovers.
