Ingredients:

  • 1 1/2 cups sifted all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons sugar
  • 3/4 cup Grape Nuts cereal
  • 1 egg, well beaten
  • 1 cup milk
  • 3 tablespoons melted shortening

"the muffins were quite tasty but the GrapeNuts remained quite hard. Next time, I would add the GrapeNuts to the liquid ingredients and let them set for 10 minutes before combining with flour mix and baking. To make healthier, I substituted whole wheat pastry flour for 1/2 the white flour, and used Grape Seed Oil (Canola would work too) instead of melted shortening. The taste was excellent. May try with applesauce for oil next time because with 3 T. of oil, they were quite oily."
