  • 2/3 cup apple juice or milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts
  • 1 chopped apple
  • cinnamon sugar

In bowl, beat egg with the juice, oil and vanilla. Stir in flour, sugars, baking powder, and salt just until flour is moistened. Batter will be a little lumpy. Stir in nuts and chopped apple. apple nut muffins, Member joelsmommy

I found this recipe on a snowy MARCH morning in NC...had dried apples that I had reconstituted with water and a little sugar but no fresh apples...used about 1/4 cup of the chopped reconstituted apples and thought the muffins were great! I also used skim milk instead of the juice...wish I had saved a little of the juice that formed when reconstituting the dried apples...bet that would have been great! We'll see how the guys in my family like them when they come in from the cold.
