Ingredients:

  • 1 egg
  • 2/3 cup apple juice or milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1/4 cup sugar
  • 1/4 cup brown sugar, packed
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped nuts
  • 1 chopped apple
  • cinnamon sugar

"I found this recipe on a snowy MARCH morning in NC...had dried apples that I had reconstituted with water and a little sugar but no fresh apples...used about 1/4 cup of the chopped reconstituted apples and thought the muffins were great! I also used skim milk instead of the juice...wish I had saved a little of the juice that formed when reconstituting the dried apples...bet that would have been great! We'll see how the guys in my family like them when they come in from the cold."
