Vanilla Muffins

Cook Time: 20 minutes

Ingredients:

  • 4 cups flour
  • 2 cups granulated sugar
  • 1 tablespoon plus 2 teaspoons baking powder
  • 1 scant teaspoon salt
  • 2 cups milk
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 8 tablespoons butter, melted

Preparation:

In a large bowl, combine the flour, sugar, baking powder, and salt. In a small bowl, whisk together the milk, eggs, melted butter, and vanilla. Pour milk mixture into the dry ingredients; mix all ingredients thoroughly. Spoon into greased or paper lined muffin tins and bake at 400° for 20 minutes.
Makes about 2 dozen muffins.

"This recipe gave me light and delicious, fluffy muffins. I didn't quite get the stated 2 dozen muffins, but thats mainly because my housemate started eating the batter :P I made half plain and the other half, I did one quarter with a marshmallow tucked inside and the other quarter with a teaspoon of strawberry jam-- place a little batter in the bottom of the patty case, and then place in the marshmallow/ jam--make sure it sinks in a little so the jam doesn't leak out the side, and spoon the remaining mix on top. Delish!"
