Chunky Brazil Nut Drop Cookies


Chunky drop cookies with Brazil nut pieces and coconut.


  • 1/2 cup shortening
  • 1/2 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 2 1/4 cups sifted all-purpose flour
  • 1/2 teaspoon soda
  • 1/4 teaspoon salt
  • 2 cups cut-up Brazil nuts (cut each nut in about 4 pieces)
  • 1/2 cup shredded coconut


Cream shortening, butter, and sugar until light. Beat in eggs and vanilla. Sift together the flour, soda, and salt; stir into the creamed mixture until well blended. Stir in the Brazil nut pieces and coconut. With a teaspoon, drop cookie dough onto lightly greased baking sheet, spacing about 2 inches apart. Bake at 350° for about 12 to 15 minutes.
Makes about 5 dozen small cookies.
