Black Walnut Cookies

Black Walnut Cookies

These black walnuts are crispy and delicious, just perfect with a glass of milk.

Ingredients:

  • 1 cup unsalted butter, softened
  • 2 cups light brown sugar, packed
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 3 1/2 cups all-purpose flour
  • 2 cups (about 6 ounces) chopped black walnuts

Preparation:

Cream butter and brown sugar until fluffy. Beat in eggs and vanilla until blended. Slowly beat in the baking soda, salt, and flour. Stir in the walnuts.

Divide the dough into 2 portions and place each on a length of wax paper. Shape each portion into a cylinder about 2 to 2 1/2 inches in diameter. Chill until firm.

Heat oven to 325°. Lightly grease a baking sheet or line with a silicone baking mat. Cut chilled cookie dough into 1/4 to 1/3-inch thick slices.

Place on the prepared baking sheet. Bake for 12 to 15 minutes, or until lightly browned.
Makes about 8 dozen cookies.
