Easy Oatmeal Coconut Cookies with Peanut Butter

These cookies have it all!

Cook Time: 15 minutes

Ingredients:

• 1 cup butter or margarine
• 1/2 cup peanut butter
• 1 cup granulated sugar
• 1/2 cup firmly packed light brown sugar
• 1 egg
• 1/3 cup pancake syrup
• 1 teaspoon vanilla
• 1 1/2 cups sifted all-purpose flour, sift before measuring
• 2 teaspoons baking powder
• dash of salt
• 1 1/2 cups rolled oats, old-fashioned or quick-cooking
• 1 cup flaked coconut

Preparation:

Cream butter, peanut butter, and sugars; beat in egg, syrup, and vanilla.
In a separate bowl sift together flour, baking powder, and salt; beat into creamed mixture until blended; stir in oats and coconut. Drop by teaspoons onto greased baking sheets. Bake at 350° for 12 to 15 minutes.
Makes about 6 dozen oatmeal coconut cookies
