Ingredients:
- 1 package (8 ounces) butterscotch pieces
- 1/2 cup butter, softened
- 3/4 cup sugar
- 1 egg
- 1 teaspoon grated orange peel
- 1 cup sifted all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup quick rolled oats
- 1 cup coconut plus more for rolling cookies
Preparation:
Melt butterscotch pieces over hot water; cool for about 10 minutes. In a mixing bowl, cream butter, sugar, egg, and orange peel until light. Add sifted flour, soda, and salt; mix well. Stir in oats and 1 cup coconut. Shape cookie dough into 1-inch balls; roll in coconut and place on greased baking sheets. If desired, decorate with sprinkles before baking. Bake at 350° for about 15 minutes.Makes about 4 to 5 dozen cookies.
