Oatmeal Spice Cookies

Oatmeal Cookies with ginger and cinnamon, along with raisins or dates and chopped nuts.

Ingredients:

  • 1 cup brown sugar, firmly packed
  • 3/4 cup margarine, softened
  • 1 egg
  • 1/4 cup light molasses
  • 1 teaspoon vanilla
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 2 cups quick-cooking oats
  • 1 cup raisins or chopped dates
  • 1 cup chopped pecans or walnuts

Preparation:

Heat oven to 350°. Lightly grease baking sheets. In large bowl, with electric mixer, cream brown sugar and margarine until light. Add egg; beat well. Blend in molasses and vanilla. Blend in flour and remaining ingredients. Drop by teaspoonfuls onto prepared baking sheet, about 2 1/2 to 3 inches apart.

Bake cookies for 8 to 12 minutes or until browned. Immediately remove to wire racks to cool.
Makes about 48 cookies.
