Oatmeal Crinkles

Cook Time: 10 minutes

Ingredients:

• 2 cups light brown sugar, packed
• 1/2 cup butter, softened
• 1/2 cup shortening
• 1 teaspoon vanilla
• 2 eggs
• 2 1/4 cups flour
• 2 cups quick cooking oats
• 1 1/2 teaspoons baking powder
• 1/2 teaspoon salt
• 1/4 teaspoon baking soda
• 1/2 cup confectioners' sugar, sifted

Preparation:

In a large mixing bowl, beat brown sugar, butter, shortening, vanilla, and eggs together with an electric mixer. Stir in flour, oats, baking powder, soda, and salt.

Shape dough into balls about 1-inch in diameter; roll in sifted sugar. Place 1 1/2 inches apart on a greased baking sheet. Bake at 350 degrees for about 10 minutes, or until very little indentation remains when touched lightly in the center. Remove to a wire rack to cool.
Makes about 60 cookies.
