Curried Okra With Onions
This skillet okra recipe is nicely seasoned with curry powder and a dash of cayenne pepper

Cook Time: 14 minutes

Total Time: 14 minutes

Yield: Serves 6

Ingredients:

  • 1 pound okra, washed, trimmed, cut into 1/2-inch thick slices
  • 2 tablespoons vegetable oil
  • 1 large onion, quartered and sliced
  • dash cayenne pepper, or more to taste
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon mild curry powder, or to taste
  • salt and pepper, to taste

Preparation:

Heat the oil in a large heavy non-stick or well seasoned iron skillet; add okra and fry for 10 minutes, turning frequently to keep from sticking. When the okra is lightly browned, add remaining ingredients. Continue cooking for an 3 minutes longer, or until onions are tender.

Serves 6.

I didn't think I like okra, Member jdine1969

It was great and I will make it again and often. I only used 1/4 diced onion and 1 cup of the sliced okra. I was heavy on the seasoning because I love curry and tumeric is so good for you. This was the second time I cooked okra and the first time I was able to eat it...and really enjoy it! Slime is not my favorite texture and this was not slimy at all. Thanks for the healthy, yummy recipe.
