Orange Spice Cookies

Ingredients:

• 14 tablespoons butter, softened
• 1 1/4 cups sugar
• 1 egg, beaten
• 1/4 cup light or dark corn syrup
• 1 teaspoon vanilla
• 2 teaspoons baking soda
• 1 tablespoon warm water
• 3 1/4 cups all-purpose flour
• 1 scant teaspoon baking powder
• 2 teaspoons ground cinnamon
• 2 teaspoons ground ginger
• 1/2 teaspoon ground cloves
• 1 tablespoon finely grated orange rind
• 1/2 cup minced candied citron or raisins
• 1/2 cup chopped walnuts or pecans

Preparation:

Cream butter; gradually add sugar, beating well at medium speed of an electric mixer. Add egg, corn syrup, and vanilla, beating well. Dissolve soda in water; add to creamed mixture, blending well. Combine flour, baking powder, and spices in a separate bowl; stir into creamed mixture, blending well. Stir in citron, orange rind, and walnuts or pecans. Chill cookie dough for at least 2 hours. Shape chilled dough into 1-inch balls and place 1 1/2 inches apart on ungreased baking sheets. Bake orange spice cookies at 350° for 10 to 12 minutes, or until browned. Cool orange cookies on wire racks.
Makes about 60 orange spice cookies.
