Orange Nut Bread

Orange Nut Bread Recipe is made with chopped raisins and orange peel and juice.

Cook Time: 1 hour

Ingredients:

  • 1 cup orange juice
  • 1 cup dates or raisins
  • 2 teaspoons finely grated orange peel
  • 1 teaspoon vanilla
  • 1 egg, beaten
  • 2 tablespoons melted butter
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup granulated sugar
  • 1/2 cup chopped nuts

Preparation:

Put orange juice in a large cup and bring to a boil in microwave, or in saucepan on stovetop. Finely chop or grind raisins or dates; add to orange juice mixture with orange peel. Cool slightly. Stir in butter, vanilla, and egg. Add orange peel. Sift together the flour, baking powder, salt, soda and sugar; add to the first mixture. Beat well; stir in chopped nuts. Bake in greased and floured 9x5x3-inch loaf pan at 350° for about 1 hour. A wooden pick should come out clean when inserted in center.
