Oven Fried Chicken With Chipotle Mayonnaise

Chicken breasts are breaded with panko crumbs and parmesan, cooked in the oven, and served with a delicious and spicy chipotle mayonnaise. For best flavor, make the mayonnaise an hour or two in advance and refrigerate until serving time.

Ingredients:

  • ***Chipotle Mayonnaise***
  • 3/4 cup mayonnaise
  • 2 chipotle peppers in adobo, finely chopped
  • 1 green onion, finely chopped
  • 1 tablespoon finely chopped cilantro
  • 1 teaspoon lime juice
  • 1 small clove garlic, finely minced
  • ***Chicken***
  • 4 to 6 chicken breast halves
  • salt and pepper
  • 1/2 cup mayonnaise
  • 1/4 cup Dijon mustard
  • 1 1/4 cups panko bread crumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon ground paprika

Preparation:

In a bowl combine the 3/4 cup mayonnaise, chipotle peppers, green onion, cilantro, lime juice, and garlic; blend well. Cover and refrigerate until serving time.

Wash chicken and pat dry. Put chicken breasts between pieces of plastic wrap and pound gently to about 1/4-inch thickness. Sprinkle all over with salt and pepper.

Combine 1/2 cup mayonnaise and Dijon mustard in a shallow bowl.

In another plate or shallow bowl combine the bread crumbs with cheese and paprika.

Dip chicken in the mayonnaise mixture to coat well then dip in bread crumb mixture. Arrange on the baking sheet. 350° for about 45 minutes.

Serves 4 to 6.
