Recipe and Photo: Diana Rattray
These buttermilk waffles make a delicious breakfast treat with syrup and butter.

Yield: 4 to 6 Servings

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons granulated sugar
  • 2 cups buttermilk
  • 3 large eggs
  • 5 tablespoons melted butter
  • oil for waffle iron

Combine the flour, baking powder, soda, salt, and sugar in a medium bowl. Stir to blend.

In another bowl, whisk together the buttermilk and eggs. Stir in the melted butter. Pour into the dry ingredients; stir until combined.

Following manufacturer's directions for oiling, measuring batter, and cooking the waffles.

Makes about ten 5-inch waffles.

The taste and texture of these waffles is superb. Even lighter than using beaten egg whites. They also re-heat in the toaster very nicely. Definitely a keeper.
