Beef and Macaroni Casserole

User Rating 4 Star Rating (1 Review)

This macaroni and beef casserole recipe is similar to an American chop suey, but baked with a cheese and bread crumb topping.

  • 8 ounces macaroni, cooked and drained
  • 1 cup chopped onion
  • 1 pound lean ground beef
  • 1 tablespoon oil
  • 2 cans (14.5 ounces each) tomatoes
  • salt and pepper to taste
  • 1 teaspoon chili powder
  • 1 cup shredded Cheddar cheese, divided
  • 1 cup buttered bread crumbs

Heat oven to 350°.

In a heavy skillet, heat vegetable oil over medium heat; brown ground beef and onion. Add tomatoes, salt, and pepper and chili powder. Reduce heat; simmer for 25 to 30 minutes.

In a lightly greased baking dish, combine meat mixture with cooked macaroni. Stir in 1/2 cup of the shredded cheese. Top with 1 cup buttered bread crumbs and remaining 1/2 cup shredded cheese.

Bake, uncovered, for 35 to 45 minutes, or until hot and the top is lightly browned.

Beef Macaroni Casserole by Diana Rattray, Member Nozzero

I happen to look at another recipe and will try it next time but this recipe was good. The recipe did not state how much butter to use with the bread crumbs so I used 3 tablespoons of butter, I also add garlic too. I used dice tomatoes and the flavor is so good. I will not cook it as long next time, I had my oven set at 350 for 30 minutes. Next time I will only cook for 20. Good recipe for something different. Will make it again.
