Macaroni and Ham Casserole

  • 1/4 cup chopped bell pepper
  • 1/4 cup chopped onion
  • 1 tablespoon butter
  • 1 tablespoon chopped pimiento
  • 1 can cream of mushroom soup
  • 7 to 8 ounces uncooked macaroni
  • 1 cup diced ham
  • pepper, to taste
  • 1/2 cup milk
  • 1 tablespoon chopped parsley
  • 1/2 cup shredded Cheddar cheese


In a skillet, sauté the bell pepper and onion in the butter for 5 minutes. Add ham and continue cooking until thoroughly heated. Cook macaroni until tender; drain. Combine all ingredients, except cheese; pour into a greased casserole dish. Bake at 350 degrees for about 30 minutes, until bubbly. Sprinkle with cheese and bake just until melted.
Serves 4.

Easy and Yummy, Member bamboozapalooza

We used organic cream of mushroom soup, egg noodles instead of macaroni, and deli ham slices, left out the pimiento and this worked great! It was quick and easy to prep and really delicious out of the oven. We withheld the fifth star only because we changed the recipe as noted to better suit our particular tastes.
