Orecchiette With Swiss Chard

Chopped Swiss chard, garlic, and Parmesan cheese are among the ingredients in this flavorful pasta dish. I like this Orecchiette along with a steak, oven fried chicken, or easy skillet cutlets, but it could also be a meatless main dish with the addition of pine nuts, white beans, or more cheese.

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Yield: Serves 4

Ingredients:

  • 8 ounces orecchiette, cooked and drained
  • 1 tablespoon olive oil
  • 2 tablespoons butter, divided
  • 1 cup chopped onion
  • 2 small cloves garlic, minced
  • 3/4 cup chicken broth
  • 1/3 cup dry white wine
  • 1/2 bunch chard, stems removed, chopped, about 2 cups packed
  • 1/2 cup heavy cream
  • 4 tablespoons Parmesan cheese, plus more for topping
  • salt and pepper, to taste

Preparation:

In a large skillet, heat olive oil and 1 tablespoon of butter over medium heat. Add onion and cook, stirring, until onion is lightly browned. Add the garlic and cook for 1 minute longer. Add broth, wine, and chopped Swiss chard. Cook, stirring, until the chard is cooked and liquids are reduced by about half.

Meanwhile, cook the pasta following package directions; drain and rinse with hot water.

To the chard mixture, add the cream and add salt and pepper to taste. Toss with the hot cooked orecchiette and cook, stirring, until heated through. Stir in the remaining 1 tablespoon of butter and 4 tablespoons of Parmesan cheese.

Transfer to a serving dish and top with more Parmesan.

Serves 4.
