Easy Penne Pasta Bake

This uncomplicated penne recipe gets flavor from garlic, tomatoes, and shredded cheese.


  • 16 ounces penne pasta or similar shape
  • 1 tablespoon vegetable oil
  • 1/2 cup chopped onion
  • 2 cloves garlic, finely minced
  • 1 large (28 oz) can tomatoes, broken up
  • 1 teaspoon dried leaf oregano, crumbled
  • salt and pepper
  • 1 1/2 to 2 cups shredded cheese, Mozzarella , divided


Cook penne pasta in boiling salted water as directed on package; drain and set aside. Meanwhile, heat vegetable oil in a medium saucepan. Add onion; sauté for about 4 minutes, or until tender. Add garlic, tomatoes, and oregano; cook until heated through. Taste and add salt and pepper. Combine cooked penne pasta, the tomato mixture, and 1 cup of the shredded cheese; spoon into a in a lightly buttered casserole. Sprinkle remaining cheese on top. Bake the penne pasta recipe for about 20 minutes at 350°. Penne pasta recipe serves 6.

I enjoyed this recipe. There wasn't a whole lot of flavor, but I rated it 4 stars because it was exactly what I expected. It was quick, easy and didn't have too many ingredients, in fact I had most things in my pantry/fridge except for the cheese and can of tomatoes. I have a 1 1/2 year old and a 4 year old, so they are quite picky. Because of this, I went with a 28 oz can of Crush Tomatoes, so as not to have the large chunks. Everything else I left the same. My husband and I thought it was good and had seconds. My kids didn't take to it much, next time I may make a smaller batch for them and subsitute their favorite jar spaghetti sauce for this tomatoe sauce mixture.
