Ingredients:
- 8 ounces mini penne pasta or macaroni
- 6 to 8 slices bacon, diced and cooked until done but not crisp
- 2 cups diced cooked chicken breast (about 2 to 3 chicken breast halves, cooked)
- 1/2 cup finely chopped red onion
- 2 plum tomatoes, seeds removed, diced
- 2 ribs celery, diced
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon garlic powder
- 1/4 teaspoon ground black pepper, or to taste
- salt, to taste
- 1/2 to 3/4 cup mayonnaise
- juice of 1/2 lemon
Preparation:
In a large bowl, combine the diced bacon, chicken, red onion, tomatoes, celery, and parsley. Toss to blend the ingredients. Stir in 1/2 cup of mayonnaise and the lemon juice. Stir in the garlic powder, pepper, and salt, to taste.
Serves 6 to 8.
