Peanut Puff Cookies

Cook Time: 12 minutes

Ingredients:

  • 1/2 cup shortening
  • 1/4 cup butter, room temperature
  • 1/2 cup peanut butter
  • 1/2 teaspoon salt
  • 1/2 cup sifted confectioners' sugar
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour - sift before measuring
  • 3/4 cup salted peanuts, finely chopped
  • sifted confectioners' sugar

Preparation:

Preheat oven to 375°. Cream shortening, butter, peanut butter, and salt until light and fluffy. Gradually beat in 1/2 cup confectioners' sugar. Blend in vanilla. Stir in flour and chopped peanuts, blending well. Shape dough into small balls. On ungreased baking sheets, bake for 12 minutes or until golden brown. Roll hot cookies immediately in sifted confectioners' sugar, let cool, then roll in more sifted confectioners' sugar.
Makes about 4 dozen peanut puff cookies.
