Melted chocolate chips provide the filling for these peanut butter pinwheel cookies.

Cook Time: 8 minutes

Ingredients:

  • 1/2 cup peanut butter
  • 1/4 cup plus 2 tablespoons shortening
  • 2 tablespoons butter, room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 1/2 tablespoons milk
  • 1 teaspoon vanilla
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup semisweet chocolate chips, melted

Preparation:

In a mixing bowl with hand-held electric mixer, cream peanut butter, butter, shortening, and sugar until light and fluffy. Beat in egg, milk, and vanilla. In another bowl, combine flour, salt, and soda. Stir flour mixture into the first mixture, blending well.

Chill dough for 1 1/2 hours, or until firm enough to handle. divide dough in half. Roll each half of cookie dough out on a floured piece of wax paper to a 10x8-inch rectangle. Spread with half of the melted chocolate. Starting at long edge, roll up like a jelly roll. Wrap in waxed paper and repeat with remaining dough and chocolate. Chill for 30 minutes, then slice 1/4 inch thick. If chilled longer, the chocolate will harden and they might be difficult to slice.

Bake cookies at 375° for 8 minutes, or until lightly browned. Makes about 4 dozen cookies.

Great to make with the kids...December 11, 2007By burchlove1974
"These are the cookies that my Grandma made with me as a little girl and that was 30 years ago. They make a yummy treat to give away in cookie tins at Christmas, too. Happy Cooking!"
