Peaches and Cream Cake

A wonderful cake made with canned peaches, cream cheese and instant pudding mix.

Ingredients:

  • 3/4 c. self-rising flour
  • 1 pkg. cheesecake or vanilla instant pudding mix (3.4 ounce)
  • 3 tbsp. butter, softened
  • 1 egg
  • 1/2 c. milk
  • 1 lg (about 28 ounces) can sliced peaches, drained
  • 8 oz. cream cheese, softened
  • 1/2 c. sugar
  • 1/4 teaspoon cinnamon mixed with 1 1/2 teaspoons sugar

"...when I made this cake it didn't come out like I expected. It was more like a pie than a cake. When I made the ""batter,"" I mixed it with a hand mixer and then with my hands and it had the consistency of play-dough (not sure if that's how it's supposed to be). The whole thing was just a little weird. If you're looking for a pie-like dish, this might be for you (and be sure you like cream cheese frosting! It was a little much for my taste), but if you want a cake, it might be better just to make a vanilla cake and cover it with fresh peaches & whipped cream."
