Peach Berry Cobbler

Ingredients:

  • 1 tablespoon cornstarch
  • 1/4 cup brown sugar
  • 1/2 cup cold water
  • 2 cups sliced fresh peaches, tossed with 4 to 6 tablespoons granulated sugar
  • 1 cup fresh cleaned blueberries
  • 1 tablespoon butter
  • 1 tablespoon lemon juice
  • 1 cup sifted all-purpose flour
  • 1/2 cup granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup softened butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons granulated sugar mixed with 1/4 teaspoon nutmeg or 1/2 teaspoon cinnamon

Preparation:

In a saucepan combine cornstarch, brown sugar, and cold water; add peaches and blueberries. Coo, stirring, until mixture thickens. Add 1 tablespoon butter and the lemon juice. Pour fruit mixture into a buttered 8-inch round baking dish. Sift together the flour, 1/2 cup granulated sugar, baking powder, and salt. Add milk, butter, and flavoring; beat until batter is smooth. Spread batter over fruit mixture. Sprinkle batter evenly with sugar and nutmeg or cinnamon mixture. Bake at 350° for 30 minutes, or until nicely browned and fruit is bubbly. Serve warm with cream or ice cream.
Serves 6.
