Ingredients:
- 1 tablespoon cornstarch
- 1/4 cup brown sugar
- 1/2 cup cold water
- 2 cups sliced fresh peaches, tossed with 4 to 6 tablespoons granulated sugar
- 1 cup fresh cleaned blueberries
- 1 tablespoon butter
- 1 tablespoon lemon juice
- 1 cup sifted all-purpose flour
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/2 cup softened butter
- 1 teaspoon vanilla extract
- 2 tablespoons granulated sugar mixed with 1/4 teaspoon nutmeg or 1/2 teaspoon cinnamon
Preparation:
In a saucepan combine cornstarch, brown sugar, and cold water; add peaches and blueberries. Coo, stirring, until mixture thickens. Add 1 tablespoon butter and the lemon juice. Pour fruit mixture into a buttered 8-inch round baking dish. Sift together the flour, 1/2 cup granulated sugar, baking powder, and salt. Add milk, butter, and flavoring; beat until batter is smooth. Spread batter over fruit mixture. Sprinkle batter evenly with sugar and nutmeg or cinnamon mixture. Bake at 350° for 30 minutes, or until nicely browned and fruit is bubbly. Serve warm with cream or ice cream.Serves 6.
