Gourmet Peach Pie

A delicious peach pie with cream cheese filling.

Ingredients:

  • 1/2 pint whipping cream
  • 1 cup powdered sugar, divided
  • 6 ounces cream cheese, softened
  • 1 9-inch baked pie shell
  • sliced peaches
  • .
  • Glaze:
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1 cup mashed peaches
  • 1 cup water
  • yellow food coloring

Preparation:

Whip the cream with 1/2 cup powdered sugar. Beat cream cheese with rest of powdered sugar. Fold together the whipped cream mixture and the cream cheese mixture. Spread in the cooled pie shell. Cool in the refrigerator for at least 2 hours. Cover cream mixture with sliced fresh peaches. For the glaze: Mix together the sugar, cornstarch, mashed peaches, water and about 2 drops of food coloring. Boil until clear, stirring constantly. When cool, pour over pie.

Canned cherry pie filling may be substituted for the fresh peaches when they are out of season.

"I've made this pie twice for two different parties, and it was a huge hit. The first time I made it, I prepared it according to the recipe, but there were some problems. First of all, when I sliced the peaches and put them on top of the cream filling, I had made a pretty spiral design with them which was completely lost when I poured the glaze with the mashed peaches over it. Also, I wasn't sure if I was supposed to add the peach juice which was created when I mashed the peaches to the glaze, so I erred on the side of caution and didn't put it in - big mistake! The glaze with the mashed peaches, water and food coloring had an artificial color to it which I didn't find appealing. The second time I tried it, I kept the spiral design, but instead of adding the water called for with the glaze, I put in the peach juice instead and didn't add the mashed peaches or the food coloring. This created a much more natual color and the taste was fabuous! Not a scrap was left, and everyone loved it! I highly recommend this recipe to anyone who loves peaches and cream on a hot summer day."
