Peanut Cookies

These peanut drop cookies are a snap to make with roasted peanuts, brown sugar, and oil.

Prep Time: 8 minutes

Cook Time: 8 minutes

Total Time: 16 minutes


  • 1 egg
  • 3/4 cup firmly packed brown sugar
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup chopped roasted peanuts


In a mixing bowl with a hand-held electric mixer, beat egg; blend in brown sugar. Combine flour, soda, and salt in a separate bowl; add to egg mixture a little at a time, alternating additions with the oil. Stir in vanilla and peanuts. Drop by teaspoonfuls onto greased baking sheet. Bake peanut cookies at 375° for about 6 to 8 minutes.
Makes about 3 dozen peanut cookies.

I'm not a good cook, but I can make these, and they taste good. 1 cup of peanuts was too much. I made them a second time with 3/4 cup, and they were better. The first time I made them, I dropped them by spoonfuls as directed, but the second time, I formed them into balls about the size of a golf ball and then smashed them flat between the palms of my hands, and that worked out better. This recipe doesn't make 3 dozen; it makes 15-18.
