Groundnut Stew Recip

Groundnut stew recipe is made with tomatoes, peanut butter, cilantro, cabbage, and other ingredients.

Ingredients:

  • 2 large onions, chopped
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon ground cayenne pepper
  • 2 cloves garlic, mashed and finely minced
  • 1 1/2 cups chopped cabbage
  • 3 cups cubed sweet potatoes, 1-inch cubes
  • 3 cups tomato juice or V-8
  • 1 cup apple juice
  • 1 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup sliced okra, optional
  • 1/2 cup unsweetened peanut butter

Preparation:

Sauté the onions in the vegetable oil until tender, about 10 minutes. Stir in the cayenne pepper and garlic and sauté for 2 more minutes. Add the chopped cabbage and sweet potatoes; sauté, covered, for a 3 minutes. Mix in the tomato and apple juices, salt, ginger, and tomatoes. Cover and simmer for about 15 minutes, or until the sweet potatoes are tender. Add the okra and simmer for 5 minutes longer. Stir in the peanut butter, and simmer gently over very low heat until ready to serve. Stir frequently to prevent scorching. Add more juice or water if the stew is too thick.
