This creamy peanut soup makes a flavorful first course soup.

INGREDIENTS:

  • 2 ribs celery, chopped
  • 1/4 cup chopped onion
  • 4 tablespoons butter
  • 3 tablespoons flour
  • 4 cups chicken broth, warm
  • 1 1/4 cups peanut butter
  • 1/2 cup heavy cream
  • 2 teaspoons lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon celery salt
  • ground peanuts, for garnish
  • sliced green onion, for garnish

PREPARATION:

In a large saucepan over medium heat, sauté the celery and onion in the butter for 5 minutes, or until tender. Add the flour, stirring until blended and bubbly. Stir in the warm chicken broth. Simmer over low heat for 30 minutes, stirring occasionally. . Stir in the peanut butter, heavy cream, lemon juice, salt, and celery salt. Cook, stirring constantly, until hot. If desired, blend in batches until smooth. Ladle into soup bowls. Sprinkle with ground peanuts and sliced green onions.
