Creamed Peas and New Potatoes

This is a flavorful side dish made with new potatoes and creamed peas. This makes a great holiday dinner dish.

Ingredients:

  • 1 1/2 lbs. very small new potatoes, about 15
  • 1 to 1 1/2 c. fresh new peas
  • 3 tbsp. sliced green onion
  • 4 tsp. butter
  • 4 tsp. all purpose flour
  • 1 c. milk

Preparation:

Scrub potatoes, cut off a narrow strip of peel around center of each potato. Cook in boiling salted water 15 to 20 minutes, or until tender; drain. Cook peas and onion in salted water 8 to 15 minutes; drain. Make a white sauce of butter, flour, dash of salt and milk. Combine the vegetables and sauce.

I was looking for a simple recipie for New Potatoes and peas...this is the one...simple yet really good, the flavor is not hidden or overwhelmed, ingredients readily on hand...
