This flavorful green pea salad is made with cooked crumbled bacon, sliced green onions, sour cream, dill or mint, and cooked green peas. Serve as a spring or summer dish or take along to a potluck.
Ingredients:
- 3 cups fresh green peas or 2 (10oz) pkgs frozen, thawed
- 4 to 5 slices crisply cooked bacon, crumbled
- 1 cup sour cream
- 1/4 cup chopped green onions
- salt and pepper. to taste
- mint or fresh dill, as desired
Preparation:
Cook peas until barely tender; drain well and chill. Combine all ingredients
and refrigerate until ready to serve. Serve this pea salad on lettuce leaves or mixed greens.
