Ingredients:
- 1/2 cup softened butter
- 1 cup firmly packed light brown sugar
- 1 teaspoon vanilla extract
- 1 egg
- 3/4 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup finely chopped pecans
Preparation:
Cream butter and sugar together. Add vanilla and egg; beat until light and fluffy. Add sifted dry ingredients and chopped pecans. Drop by scant teaspoons onto ungreased baking sheets. Bake at 400° for about 5 minutes. Cool for about 30 seconds; remove to racks.
Makes 7 to 8 dozen cookies.
