Rumrunner's Pecan Pie Recipe

This pecan pie recipe was shared by Mary Ann.

Cook Time: 55 minutes

Ingredients:

  • 3 eggs
  • 1 tblsp all-purpose flour
  • 1 cup dark corn syrup
  • 1 cup sugar
  • 1/4 cup rum (I used Myers dark rum)
  • 1/4 cup butter, melted
  • 1 tsp vanilla
  • 1 cup coarsely chopped pecans
  • 1 9-inch frozen deep dish pie crust, unbaked (remove wax paper!)

Preparation:

Preheat oven to 350°. In a large bowl beat eggs with wire whisk. Add flour and continue to whisk until the mixture is blended. Add corn syrup, sugar, rum, butter and vanilla. Stir in pecans. Pour mixture into pie crust. Bake 50 - 55 minutes, or until knife inserted near center comes out clean. Let cool at room temperature on wire rack.

My pie was a tad runny so next time I will probably reduce the rum by 1 tblsp. I also used a hand mixer for a minute or two before I added the pecans. Bon Appetite!
