Green Tomato Chutney

Ingredients:

  • 2 pounds green tomatoes, cut in wedges and sliced
  • 4 medium Granny Smith apples, peeled and diced
  • 2 3/4 cups light or dark brown sugar, firmly packed
  • 2 cups cider vinegar
  • 1 cup dark raisins
  • 1 cup golden raisins
  • 2/3 cup chopped onion
  • 1/2 teaspoon salt
  • 2 cups seedless green grapes
  • 1 tablespoon mustard seeds
  • 2 teaspoons ground ginger
  • 1 teaspoon dry mustard
  • 1/2 teaspoon crushed red pepper

Preparation:

Combine first 8 ingredients in a large kettle or Dutch oven; stir well. Bring to a boil; reduce heat, and simmer, uncovered, 30 minutes. Add grapes and seasonings; stir well. Cook, uncovered, over medium heat for 1 hour or until mixture is thickened.

Spoon chutney into hot sterilized jars, leaving 1/4-inch head space; wipe jar rims. Cover at once with metal lids, and screw on bands. Process for 15 minutes in a boiling-water canner, or 20 minutes for altitiudes of 1001 to 6,000 feet. Over 6,000 feet, process for 25 minutes.

Makes about 2 1/2 pints.

"First the yield.......it made 13 half pints too sweet, too picante and all you could taste is brown sugar.....I cut back about 1/2 cup of brown sugar and it was still too sweet the tomatoes got lost in the recipe would not make it again"
