If you're looking for a special pie crust for a pie, this recipe is an excellent choice. This gingersnap pie crust is perfect for pumpkin pie or a pudding or cream cheese type of filling. Gingersnaps are difficult to crush finely by hand, but a food processor makes fine crumbs easily.

Cook Time: 9 minutes

Total Time: 9 minutes

Yield: Serves 8

  • 1 1/2 cups finely crushed gingersnaps
  • 2 tablespoons granulated sugar, optional
  • 5 tablespoons salted butter, softened

Preheat the oven to 350°.

Combine all ingredients and mix well until moistened; press firmly into a 9-inch pie plate, covering the bottom and sides.

Bake for 9 minutes. Cool thoroughly, then fill as desired.

Makes 1 pie crust, 8 servings.
