Cajun Cake Recipe

Cajun cake with pineapple and a topping of coconut, pecans, butter, evaporated milk, and sugar.

Cook Time: 30 minutes

Ingredients:

  • 1 1/2 cup sugar
  • 2 eggs
  • 15 ounces crushed pineapple
  • .
  • Add
  • 2 cups flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoon baking soda

Preparation:

Mix well and pour into greased 9x13x2-inch inch pan, bake for 30 min at 350°. Make topping (below) while cake is baking.

Topping

  • 1 stick butter (4 ounces)
  • 1 cup granulated sugar
  • 3/4 cup evaporated milk
  • 1 teaspoon vanilla
  • 1 cup flaked coconut
  • 1 cup chopped pecans
Combine 1st 3 ingredients in saucepan and boil very slowly for 10 minutes. Add remaining ingredients. Spread over hot cake.
Let cake and topping cool completely before slicing.
