This pineapple cake recipe is baked in a loaf pan.
Ingredients:
- 1/2 cup margarine
- 1 1/2 cups sugar
- 1/2 teaspoon vanilla
- 1 cup crushed pineapple -- undrained
- 2 1/2 cups cake flour
- 1 tablespoon baking powder
- dash salt
- 1/4 cup water
- 3 egg whites -- beaten until stiff
Preparation:
Cream margarine with sugar and vanilla until fluffy. Add pineapple. Sift
dry ingredients together; add to creamed mixture alternately with water.
Fold in egg whites; pour into a greased and floured loaf pan. Bake at 350
degrees for about 1 hour, or until done. Glaze with a powdered sugar
glaze, if desired.
