(Ingredients:
- 1/2 cup butter or margarine
- 1/2 cup light brown sugar, firmly packed
- 1/2 cup granulated sugar
- 1 large egg
- 1 can (8 ounces) crushed pineapple, undrained
- 1 1/2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts or pecans
Preparation:
Cream butter and sugars until light and flurry; beat in egg. Stir in pineapple and oats. Sift together the flour, baking soda, cinnamon and salt. Add sifted mixture to the pineapple mixture; stir until well blended. Stir in chopped nuts. Drop by teaspoonfuls onto ungreased cookie sheets. Bake pineapple cookies at 375° for about 15 minutes. Makes about 48 pineapple cookies.
