Cook Time: 45 minutes
Ingredients:
- 3 eggs
- 2 1/2 cups crushed pineapple
- 2 tablespoons sugar
- 3 tablespoons flour
- 1 1/2 tablespoons butter -- melted
- 1 1/2 tablespoons lemon juice
- pinch salt
Preparation:
Beat eggs until light; stir in remaining ingredients. Pour into a buttered baking dish and bake at 350° for 45 to 55 minutes, or until the consistency of rice pudding. Serve with ham or roast pork.Serves 6 to 8 as a side dish.
