Scalloped Pineapple

This scalloped pineapple casserole is a wonderful accompaniment to ham or pork.

Cook Time: 1 hour, 15 minutes

Total Time: 1 hour, 15 minutes


  • 1 cup butter
  • 2 cups sugar
  • 4 eggs, beaten
  • 1/4 cup milk
  • 4 cups white bread cubes
  • 1 can (20 ounces) crushed pineapple


Cream together butter, sugar, and eggs. Stir in remaining ingredients and blend well. Place in a buttered 11x7-inch baking dish; bake at 375° for 15 minutes, then at 350° for about 50 to 60 minutes.
Serves 6 to 8.

Delicious Flavor, Member papayadove

I needed a pineapple recipe for a Psych party (awesome show! There's a pineapple hidden in every episode, so that's why it's relevant). The only pineapple recipes I knew how to make were pineapple upside down cake and fruit salad, so I wanted to try something different. This recipe sounded great; I took a chance and whipped it up. It was a huge hit! It's quick to make, and easy enough that my kids helped. As a previous reviewer said, 2 cups of sugar seems like a bit much. One cup should suffice. Next time, I plan on making it for dessert and adding a scoop of French vanilla ice cream on top.
