Texas-Style Beans

Ingredients:

  • 2 cups pinto beans, dry
  • 1/4 pound salt pork, diced
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 2 teaspoons salt
  • dash pepper
  • 2 cans tomatoes, (16 oz each)
  • 3/4 cup diced green pepper
  • 1 tablespoon sugar
  • 6 drops bottled hot pepper sauce

Preparation:

In 2-quart bean pot or casserole, cover beans with water; soak overnight. Drain. Cover with fresh water; add salt pork, onion, and garlic to the beans. Simmer, covered, for 2 hours. Add salt, pepper, tomatoes, green pepper, sugar, and hot pepper sauce. Cover and simmer 3 hours more. Serve beans with cornbread squares or hot cooked rice.
Makes 8 to 10 servings.

"Instead I used 2-15 oz. cans of pinto beans and a 14.5oz can of Muir Glen Adobo Seasoned diced tomatoes. No pork. I put all of the ingredients together in a sauce pan and heated until ready. Oh I didn't use any green pepper either and used about 5 cloves of garlic. MMMMmm Tasty!"
