Prune Walnut Spice Cake

Ingredients:

  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 2 cups sifted all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2/3 cup prune juice
  • 2 tablespoons lemon juice
  • 1 cup chopped cooked prunes*
  • 1 cup chopped walnuts

Preparation:

In a large bowl, cream shortening, gradually beating in sugar, until light and fluffy. Beat in eggs, one at a time, beating well after each addition. In another bowl, sift together the flour, baking powder, salt, soda, and spices. Add to the first mixture alternately with the prune juice and lemon juice. Beat until batter is smooth. Stir in the chopped prunes and walnuts. Pour into two generously greased and floured 8-inch round layer cake pans. Bake in a preheated 375° oven for about 30 to 40 minutes, or until cake springs back when lightly touched with finger. Remove from oven and let cool in pans for 5 minutes. Turn out onto racks to cool completely.
Frost and fill with a fluffy frosting or your own favorite.
*Pour boiling water over cut up prunes and let stand for 2 hours; drain well and measure 1 cup.
